Swedish Meatballs Over Noodles

We made these while hosting our exchange student from Sweden. The recipe was sent from his family and they were delicious!

Ingredients:

  • 1/4 cup onion chopped
  • 5 tablespoons butter
  • 2 slices of bread torn into small pieces
  • 3 tablespoons of milk
  • 1 and 1/4 pound 90% ground beef
  • 1 egg
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 1tablespoon olive oil
  • 1 tablespoon Worchestershire sauce
  • 2 tablespoons flour
  • 1 and 3/4 cup chicken broth
  • 1/2 cup sour cream
  • 1 teaspoon yellow mustard
  • buttered egg noodles or mashed potatoes for serving under the meatballs and gravy

Directions:

  • In a large skillet heat a tablespoon of butter over medium heat. Add the onions and allow them to soften and become translucent. Remove to a medium bowl to cool.
  • In a small bowl pour the milk over the bread pieces and toss with your fingers to make sure the bread soaks up the milk. Let it sit for a few minutes.
  • In the medium bowl with the onions, combine the ground beef, bread mixture, egg, salt and pepper, nutmeg and allspice and mix until just combined. Do not over mix and cause tough meatballs.
  • shape into small one inch meatballs.
  • Heat 1 tablespoon of butter along with the oil in the skillet over medium heat. Add the meatballs and cook 5-10 minutes turning the meatballs frequently for even browning. Do not overcrowd the meatballs because you do not want them to steam. Better to brown the meatballs in batches.
  • Add the remaining 3 tablespoons of butter to the skillet on medium-low heat. Sprinkle in the flour and whisk until it turns golden brown. Slowly pour the broth in while you whisk. Lower the heat and whisk in the sour cream until it dissolves completely.
  • Add the garlic powder, the mustard, Worcestershire sauce and let it come to a gentle simmer before lowering the heat. Allow the sauce to thicken for about 10 minutes. Add meatballs to the sauce when it reaches the desired consistency.
  • Serve on top of buttered noodles or mashed potatoes.
