Shrimp Tacos with Mango Salsa

This recipe was gifted to us by two teacher friends Lanie and Kim. They have great cooking advice and delicious recipes.

Shrimp

salt and pepper

garlic powder

toss in a mixture of flour and smoked paprika

dip in egg

panko bread crumbs

lay on a baking sheet

let sit in the freezer for 20 minutes

fry in canola oil (optional add Balsamic coconut vinegar) until brown on each side. Do not overcook.

Lay on paper towel when done.

Crema

equal parts mayo and sour cream

drizzle of honey

add Sriracha until taste or spicy enough

salt and pepper

Mango Salsa

mango

red onion chopped

red pepper chopped

jalapeno chopped

cilantro

lime juice

Mix together and let sit.

Crisp tortillas in a skillet with a few drops of oil.
