Shrimp and Cheesy Grits

This delicious southern recipe takes us back to our years in North Carolina.

Ingredients:

  • 4 cups water
  • salt and pepper
  • 1 cup stone ground grits
  • 3 tablespoons butter
  • 2 cups of hand shredded Extra sharp cheddar cheese
  • 1 pound shrimp peeled and deveined
  • 1 pound smoked sausage or half pound of bacon, chopped
  • 4 teaspoons lemon juice
  • 2 tablespoons parsley, chopped
  • 1 cup of thinly sliced green onions
  • 1 large clove of garlic, minced

Directions:

  1. Bring the water to a boil and add salt and pepper. Add grits and cook until water is absorbed, about 20 minutes. Remove from the heat and stir in cheese and butter. Cover and set aside.
  2. Dice the sausage and cook in a large skillet until cooked through. Stir in the shrimp cooking slowly until the shrimp turns pink. Add lemon juice, parsley, green onions and garlic. Stir to combine.
  3. Pour grits into a serving bowl. Top with shrimp and sausage mixture and stir. Serve immediately (shrimp will cool fast).
