Salsa

Homemade salsa is such a wonderful thing to make with fresh tomatoes and peppers from the garden!

Ingredients:

4 ripe tomatoes, cored and quartered

28 oz. can peeled San Marzano tomatoes

7 oz. can of diced green chilies

1 small red onion or half a large onion, peeled and quartered

3 garlic cloves, peeled

3 jalapenos, seeds removed

1/3 cup fresh cilantro leaves

juice from 1-2 limes, freshly squeezed

3 teaspoons ground cumin

2-4 teaspoons sugar (optional)

2-3 teaspoons salt (optional)

Directions:

Place all ingredients into a food processor and pulse until smooth and well blended. Taste and add more jalapeno, cilantro, cumin, salt or sugar if desired. Refrigerate until ready to serve. Serve with tortilla chips.

Will keep in the refrigerator for up to 2 weeks. Can be frozen for up to 4 months.
