Potato Soup

Ingredients:

3 tablespoons butter

1/3 cup of diced onion

1/2 cup carrot sliced thin

2 tablespoons flour

8 russet potatoes peeled and sliced into bite sized chunks

4 cups milk

1 cup heavy cream

4-5 chicken boullion cubes

salt and pepper to taste

Optional toppings: bacon, diced ham, shredded cheddar

Directions:

Melt butter over medium heat and saute onion and carrot until soft. Sprinkle with flour and stir. Add diced potatoes and stir for one minute.

Add milk, heavy cream and boullion cubes. Simmer on low for 30 minutes, stirring frequently. Use a wooden spoons to press and “mash” some of the potatoes.

Serve with toppings.
