Potato Salad

This is a family favorite recipe and is adapted from the Hellman’s recipe. The key is to use the Hellman’s Real Mayonnaise for the best flavor.

Ingredients:

  • 2 pounds red potatoes or 6 medium sized potatoes peeled and quartered
  • 1 cup of Hellman’s Real Mayonnaise
  • 2 tablespoons vinegar
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground black pepper
  • 1/2 cup chopped celery
  • 1 tablespoon onion flakes
  • 3 hard boiled eggs peeled and cubed

Directions:

Boil potatoes in water on medium high heat for about 10-15 minutes until fork tender. Drain and cool in a strainer on the countertop. Combine the mayonnaise, vinegar, salt, sugar and pepper in a large bowl. Toss in cubed, room temperature potatoes, celery and onion flakes and stir to combine. Add the eggs last stirring in gently. Keep cool until ready to serve.
