We fell in love with Pimento Cheese Dip when we visited the Carolinas. It is hard to find it in stores up north so we learned to make our own. Pimento cheese is best 24-48 hours after you make it. It takes time for all of the flavors to come together.
Ingredients:
1 package of Philidelphia cream cheese
1/2 block of sharp yellow cheese, grated (do not use pre-shredded)
1/2 block of extra sharp white cheese, grated (do not use pre-shredded)
1 block of Monterey Jack cheese, grated (do not use pre-shredded)
1/2 cup mayonnaise
4oz. jar pimentos drained and chopped
1/2 teaspoon garlic salt
3 chopped green onions (optional)
1/4 cup jalapeños peppers chopped (optional)
salt and pepper to taste
Directions:
Combine all ingredients in a mixer and mix together on medium speed until smooth.
Serve on sandwiches or as a dip with crackers or pita chips.
