Peach Cobbler

We love peach season. It only lasts a short time here in upstate NY, but when the peaches arrive at the farmers market we make cobbler!

Ingredients and Directions: (read all the way to the bottom, there are a lot of ingredients)

Peach mixture:

  • 8 fresh peaches sliced into thin wedges
  • 1 teaspoon fresh lemon juice
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 2 teaspoons cornstarch

Pour all of these ingredients into a big bowl, stir to coat and pour into the bottom of a 9 x 13 baking dish. Bake in in the oven at 425 degrees for 10 minutes.

Topping:

  • 2 cups unbleached all purpose flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 12 tablespoons of butter chilled, sliced into little chunks or grated
  • 1/2 cup boiling water

Combined the dry ingredients in a big bowl and mix well. Stir the butter into the flour mixture. Stir in the boiling water and stir to moisten the dry ingredients. leave plenty of lumps of butter.

Remove the peaches from the oven. Drop the topping over the peaches in little spoonfuls.

Cinnamon-Sugar Topping

  • 1/3 cup white sugar
  • 2 teaspoons of cinnamon

Combine in a shaker or small bowl. Sprinkle the Cinnamon sugar topping over the cobbler. Bake for 20 minutes or until the crust is a golden brown. Serve warm with vanilla ice cream.
