Mini Quiches
Auntie Colleen makes these delicious mini quiches every Thanksgiving for breakfast. They have quickly become a favorite breakfast treat, especially for the kids.
Ingredients:
- 2 packages (3 ounces each) cream cheese, softened
- 5 teaspoons milk
- 2 eggs
- 1/2 cup of shredded Colby or yellow sharp cheese
- 2 tablespoons finely chopped green pepper
- 1 tablespoon finely chopped onion
- 1 tube (8 ounces) refrigerated crescent rolls separated into triangles or pie crust cut into small circles with a biscuit cutter
- 5 strips of bacon, cooked and crumbled
Optional ingredients: chopped spinach, diced mushrooms, diced tomatoes, green onions, diced sausage or ham, etc.
Directions:
- In a mixer, combine cream cheese and milk until smooth. Add the eggs, cheese, green pepper and onion continuing to mix well.
- Separate the dough into 8 triangles, press into the bottom and up the sides of greased muffin cups. Sprinkle half the acon into the cups. Pour the egg mixture over the bacon, top with the remaining bacon.
- Bake at 375 degrees for 20 minutes or until a knife comes out clean. Serve warm.
- Serves 8.
