Meatloaf

Meatloaf is so versatile, you can change the ingredients to suit your taste. Here is a basic recipe that I have used in our house for years.

Preheat the oven to 350 degrees

Ingredients:

  • 1 tablespoon Olive Oil
  • 1/2 cup of chopped onion
  • 3 tablespoons of Wochestershire sauce
  • 1 tablespoon tomato paste
  • 1/3 cup chicken broth or stock
  • 1 pound of ground beef
  • 1 pound of pork*
  • 1 pound of veal *
  • 2 eggs slightly beaten
  • 1 cups of Panko bread crumbs
  • 1/2 cup of ketchup or bbq sauce
  • 1/4 cup of fresh chopped flat leaf parsley
  • salt and pepper
  • finishing glaze options – ketchup, bbq sauce, olive oil and Montreal seasoning
  • *you can substitute a meatloaf mix

Directions:

  1. Saute onions in olive oil until translucent, remove from the heat to cool down. Add worchestershire sauce, chicken broth and tomato paste.

2. In a large bowl combine the meats and eggs with your hands. Spoon in the onions and continue to combine with your hands. Toss in the rest of the ingredients and mix together all of the ingredients with your hands until well combined.

3. Line a baking sheet with Parchment paper. Press your meatloaf mixture into the middle of the pan and form the meat into a loaf. Take time to pat the meat down and press in the sides to form a flat oval shape.

4. Bake for 45 minutes to an hour. Meatloaf should no longer be pink on the inside. You can spread a ketchup glaze over the top, a bbq sauce glaze or a combination of each. Gigi used to spread an olive oil glaze with a Montreal seasoning over the top and put it under the broiler for 5 minutes at the end to get a crispier finish. You can choose how you would like to top your meatloaf off.

5. Let the meatloaf rest for 10 minutes before serving. Transfer from the baking sheet to a serving platter, slice and serve.
