Mashed Twice Baked Potatoes

Ingredients:

1 bag of red potatoes peeled

1 lb bacon

2 cups sharp cheddar cheese

1/2 cup sour cream

1/3 cup milk

chopped green onion (optional)

Directions:

Boil potatoes until fork tender. Drain. Cook bacon until crispy. In a large bowl beat together the potatoes, cheese, sour cream, milk and salt and pepper. Crumble bacon and stir into the potato mixture. Spread the potato mixture into a large casserole dish. Bake at 350 degrees for 40 minutes. Remove from the oven and sprinkle thin slices of green onion over top. This recipe will feed 10-15 people.
