Limoncello

Ingredients:

  • 10-12 organic lemons, wash with a scrubbing cloth and dry with a paper towel
  • 1 – 1000 mL bottle of 100 proof vodka
  • sugar syrup – 5 cups of water to 3 and 1/2 cups of sugar – bring water to a low boil, remove from heat and stir in sugar, cool

Directions:

  • Zest the lemons using a microplane zester being very careful to just zest the outermost peel and none of the white pith inside. White pith will make the limoncello bitter. Make home made lemonade with the lemons.
  • Use a Brita pitcher to filter the vodka four times.
  • Place the lemon peel in a large glass container, pour in vodka and seal with an airtight lid and place in a cool, dark location for 2 months. The longer your limoncello steeps, the stronger the flavor will be.
  • Strain the liquid through a fine sieve. Removing the residual will result in a smoother limoncello.
  • Pour in the simple sugar syrup and secure the airtight lid again and let your limoncello sit in a cool, dark location again for another 1-2 months.
  • Divide your limoncello between 3 half-liter glass bottles and store in the freezer until you are ready to serve.
