Grilled Steak with Herb Butter

Ingredients:

2 strip steaks 1 and 1/2 inch thick

olive oil

Steak Seasoning:

3/4 tablespoon kosher salt

1 and 1/2 teaspoon of ground peppercorns

1/2 teaspoon of dried minced garlic

1/2 teaspoon of dried minced onion

1/4 teaspoon fennel seeds

1/2 teaspoon red chili pepper flakes

Herb Butter:

1 stick or 1/2 cup salted butter softened at room temperature

2 pinches of steak seasoning

2 tablespoons parsley chopped

1 tablespoon fresh rosemary minced

1 tablespoon fresh thyme minced

1 clove of garlic minced

Directions:

Steak Seasoning: place all ingredients in a ziplock bag and crush with a meat pounder or rolling pin.

Herb butter: Add ingredients to a bowl and stir with a fork. Spread butter mixture onto a sheet of plastic wrap and mold into a log shape. Refrigerate until firm.

Grilled Steaks: Trim fat off steaks and pat dry with a paper towel. Drizzle each side of the steak lightly with olive oil. rub the steak seasoning into the steak. Use most or all of the seasoning.

Light 2 out of the 3 grill burners including the sear. Heat on high for 10 minutes. Add steaks and sear on each side for 2 minutes. Keep the lid of the grill closed until it is time to flip.

Place the steaks on the unlit part of the grill after they have been seared on both sides. Continue to cook with lid closed for 10 minutes.

Remove steaks from the grill and let rest for 5 minutes.

Top with slices of the herb butter and serve.
