Chicken Pesto Sandwiches

These sandwiches are so easy and make a great lunch at the lake.

Ingredients:

  • 1 boneless chicken breast for every 2 people you are serving
  • Italian marinade
  • 2 crispy cooked bacon slices for every sandwich you make
  • pesto sauce*
  • hamburger buns of your choice
  • optional toppings: lettuce, tomato, avocado, red onion, pickles, pickled onions

Directions:

Butterfly your chicken breast creating 2 pieces. Using a meat mallet, pound each chicken breast to 1/2 inch thick. Set chicken breasts in Italian marinade for at least 4 hours, preferably overnight. Grill the chicken until completely cooked through. Top with a tablespoon (or more) of pesto sauce and the two slices of bacon. Serve on rolls.
