Chicken Pesto Sandwiches

Ingredients:

2 boneless, skinless chicken breasts

4 slices of bacon, cooked and broken in half

4 hamburger buns

Homemade Pesto Sauce

Optional toppings: lettuce, tomato, cheese

Directions:

Cut each chicken breast in half and pound down to make thin cutlets that are the same thickness. Grill chicken cutlets on medium heat, flipping the chicken after 4-5 minutes, until cooked throughly. Chicken is done when the internal temperature reaches 165 degrees. To assemble the sandwiches on the bun, place one piece of chicken, a tablespoon (more or less to taste) of pesto on top of the chicken, 1 broken slice of bacon and optional toppings.
