Chicken and Sausage Gumbo

Uncle Timmy’s famous gumbo recipe. It’s REALLY good!

Ingredients:

  • 1 pound boneless chicken thighs, cut into bite sized pieces
  • package of andouille sausage cut into bite sized pieces
  • 1/3 cup vegetable oil
  • 1/3 cup flour
  • 1/2 onion diced
  • 1/2 pepper diced
  • 2 celery ribs diced
  • 3 cloves of garlic minced
  • 1 teaspoon salt
  • 1 tablespoon paprika
  • 1/2 teaspoon cayenne pepper
  • 3 cups chicken stock

Instructions:

Combine oil and flour in a dutch oven at low heat. Stir often over over low heat for 15-30 minutes until nutty brown (do not burn). Add the vegetables. Stir for 10 minutes on medium low. Add sausage, garlic paprika, cayenne and salt stirring to combine. Add chicken stock and let it simmer for 30 minutes. Add chicken and let it simmer for 30 more minutes. Serve over rice.
