Cheesy Cauliflower

Aunt Deana’s awesome healthier alternative to macaroni and cheese.

Ingredients:

  • 2 heads of cauliflower chopped into bite size pieces
  • 3 tablespoons cornstarch
  • 1/2 stick of butter
  • 2 cups of 2% milk
  • 1 cup of shredded white sharp cheddar (hand shred)
  • 1 cup of shredded yellow sharp cheddar (hand shred)
  • a couple slices of white American cheese deli slices

Directions:

Spread cauliflower pieces evenly on a baking sheet. Roast the cauliflower at 375 degrees for approx. 20 minutes. This will soften the cauliflower but also pull of the moisture.

In a separate sauce pan, melt the butter on medium-low heat and whisk with cornstarch. Once the mixture melts together, whisk in the milk and heat slowly to a boil whisking constantly.

Allow the milk mixture to boil for 1 minute. Remove from heat. Let the milk mixture cool for 5 minutes. Whisk in the shredded cheddar cheeses and the American cheese slowly, allowing it all the melt together.

Stir the roasted cauliflower pieces into the melted cheese mixture and pour into a baking dish. Bake at 350 degrees for 30 minutes until bubbly.

Remove from oven and cool for 10 minutes before serving.
