This recipe was passed to us from Kim B. who is an amazing cook. This became a quick family favorite. In order for this recipe to taste it’s best, use pecorino romano cheese. Kim suggests that you purchase a large block of it from Sam’s Club and use it with recipes that require shredded parmesan cheese.
Ingredients:
4 or 5 cloves of garlic minced
1 cup of mayonaisse
3/4 cup of freshly grated pecorino romano cheese
12-15 leaves of fresh basil shredded
1 baguette sliced into 1/2 thick pieces
1 roma tomato
Directions:
Mix the mayo, garlic, cheese and basil in a bowl. The mixture should be thick. Spread on the thinly sliced baguettes. Place a thin slice of Roma tomato on each cheesy baguette. Bake at 350 degrees for 10 minutes or until bubbly and brown.
