Broccoli Bow Ties

Our cousin Katie has the best food blog called The Parsley Thief. Her recipes and photos are amazing. This recipe was adapted from her.

Ingredients:

2 heads of broccoli, cut into florets, steamed until fork tender

4 Giannelli sausage links grilled and cooked through

1 box of whole wheat broccoli bowtie pasta

1 stick of salted butter

3 cloves of garlic minced

2 tablespoons of olive oil

1 lemon

1/4-1/2 cup of pine nuts toasted in the oven

1 block of pecorino romano cheese

salt and pepper

Directions:

Steam broccoli until fork tender and set aside. Cut sausage into bite sized slices and set aside. Cook the bowtie pasta according to package directions. Combine with broccoli and sausage in a large serving bowl. Set aside.

In a separate pan, melt the butter with the minced garlic and olive oil. Stir gently and allow the garlic to roast slightly in the butter. Do not overcook or burn. Stir the butter sauce into the pasta, sausage and broccoli, coating well.

Cut a lemon in half and squeeze over the pasta as you toss.

Toss in the pine nuts, salt and pepper, grate the pecorino romano cheese over top and toss a couple times.

Serve in bowls. Grate more cheese over top to your liking.
