Best Ever Chocolate Chip Cookies

This recipe is adapted from my cousin Katie’s amazing chocolate chip cookie recipe on her blog the Parsley Thief . The key to great chocolate chip cookies is to keep a chocolate chip jar. Combine dark chocolate chips, semi-sweet and chunks.

Ingredients:

1 and 1/4 cup (2 and 1/2 sticks) unsalted butter melted

1 and 1/4 cup brown sugar

1 cup white sugar

2 teaspoons vanilla extract

2 eggs

1 and 2/3 cup cake flour and 1 and 2/3 cup bread flour (if you do not have cake and bread flour, use 3 cups of all purpose flour)

1 and 1/2 teaspoon baking powder

1 and 1/4 teaspoon baking soda

1 and 1/2 teaspoon kosher salt

2 cups chocolate chips (mix of dark, chunks, milk and semi-sweet)

Directions:

Cream together the butter, sugars, vanilla, egg until smooth. Combine the flours, baking soda, baking powder and salt in a separate bowl and and add to the butter/sugar mixture slowly as you mix to combine. Stir in the chocolate chips. Use a 1/3 cup scoop to drop the dough on a baking sheet lined with Parchment Paper. Bake 6 cookies at a time. We like to make these cookies big, it makes them so much more fun. Makes about 1 and 1/2 dozen 5 inch cookies.

Bake at 325 degrees for 17-20 minutes until just a little under done. Cool for 5 minutes before transferring to a cooling rack.
