Beef Enchiladas

Ingredients:

For the meat mixture:

  • 1/2 cup all purpose flour
  • 2 tablespoons canola oil
  • 1 pound 80% or 90% ground beef or ground turkey
  • salt and pepper to taste
  • 1/2 medium cooking onion peeled and chopped
  • 2 cloves garlic peeled and minced
  • 1 jalapeno pepper or more to taste, seeds removed if you prefer less spicy, chopped
  • 3 tablespoons chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 2 cups chicken stock

For the Enchiladas:

  • 1/2 cup cooking oil
  • 12 corn tortillas
  • 3 cups shredded cheese or queso
  • 1/2 cup chopped green onions

Directions:

Prepare the meat mixture by simmering flour in a wide pan over medium heat. Stir frequently until it turns golden brown and gives off a nutty smell. Scrape off onto a plate and cool.

Wipe out the pan and heat 2 tablespoons of oil over medium high heat. Add meat, breaking it up as you brown. Season with salt and pepper. When cooked through transfer meat to a plate and leave drippings.

Add onion, garlic and jalapeno to the pan stirring over medium heat until soft. Stir in tomatoes, cook for 5-10 minutes. Add chili powder, cumin and oregano, stir to combine. Return browned meat to the pan along with the toasted flour. Stir to combine.

Over medium heat, slowly stir in the chicken stock allow the mixture to thicken and simmer. Reduce heat to low and cover and simmer for 45 minutes-1 hour.

Preheat oven to 425 degrees. Add 1/2 cup of oil to a saute pan over medium heat. Using tongs, add one tortilla at a time Heat for 10 seconds each side until soft and lightly browned. Set on a cooling rack and repeat with remaining tortillas.

Assemble the enchiladas by scooping 1/2 cup of the meat mixture in the bottom of a 9×13 inch pan. Spread it to coat the bottom. Scoop a tablespoon of cheese and meat mixture into each enchilada, roll up and place seam side down on the pan. Pour the remaining meat mixture over the top of the enchiladas and top with cheese.

Bake at 425 degrees for 10-15 minutes until sauce bubbles and cheese is melted. Remove from oven and sprinkle with chopped green onions. Serve immediately.
