BBQ Chicken or Pork Bowls with Sweet Potatoes, Coleslaw and Pickles

Ingredients:

BBQ Chicken or Pork

1 cup per person of cooked shredded chicken or pork

Your favorite BBQ sauce to taste

Homemade Dill Pickles

  • sprig of fresh dill
  • 1 minced clove of garlic
  • Desired slices of thinly sliced English cucumber
  • teaspoon yellow mustard seeds
  • 1/4 cup water
  • 1/4 cup white vinegar
  • 1/2 tablespoon salt

Mix ingredients into a bowl and let sit as you cook.

Sweet Potatoes

  • 4 sweet potatoes peeled and cubed
  • 2 tablespoons chili powder
  • 1 tablespoon cinnamon
  • 2 tablespoons coconut oil

On parchment paper lined baking sheet, spread the coconut oil. Toss sweet potato chunks in chili powder and cinnamon. Spread out potatoes on the baking sheet. Bake at 425 degrees for 20 minutes, toss the potatoes and bake 10min or until desired crispness.

Coleslaw

  • Broccoli Slaw
  • Coleslaw dressing

Combine the slaw with the dressing and chill.
