BBQ Chicken and Sweet Potato Bowl

BBQ Chicken

Pound two large chicken breasts to tenderize and flatten

Marinate with your choice BBQ sauce

Grill chicken until cooked through, cut into bite sized pieces.

Sweet Potatoes

2 sweet potatoes peeled and cubed

1 tablespoon cinnamon

1 tablespoon chili powder

1 tablespoon coconut oil

Line a baking sheet with parchment paper. Spread cubed potatoes on the paper. Sprinkle with coconut oil, cinnamon and chili powder. Bake for about 30 minutes or until fork tender.

Homemade Pickles

sprig of fresh dill

1 clove garlic minced

1/4 English cucumber sliced thin

Pinch yellow mustard seeds

1/4 cup water

1/4 cup white or white wine vinegar

1/2 tablespoon salt

Combine all pickle ingredients in a small bowl or mason jar and set aside.

Coleslaw

1- 14 oz. bag shredded coleslaw or broccoli slaw mix

1 jar Maria’s coleslaw dressing

Stir in a medium sized bowl to combine.

To assemble bowls, divide BBQ chicken, sweet potatoes, and coleslaw among 4 bowls. Garnish with pickles.
