Alfredo Sauce

Ingredients:

1/2 cup or 1 stick of salted butter

1 and 1/2 cups of heavy cream

2-3 cloves of garlic minced

1 and 1/2 cups – 2 cups of freshly grated pecorino romano cheese right off the block

salt and freshly ground black pepper to taste

optional freshly chopped parsley

Directions:

Melt butter in a sauce pan over medium heat. Pour in cream and heat on medium to a simmer, but not a boil. Simmer for 10-30 minutes to get your desired thickness. If you let a creamy sauce come to a boil it will ruin the texture. Turn the heat off but leave the pan on the hot burner and whisk in the garlic and seasonings. Add the cheese at the end and stir until melted and the sauce is creamy. Do not increase the heat after adding cheese or the cheese will separate and become oily. Let sauce stand for 5 minutes before serving.

Recommended to serve this sauce with fettuccine pasta.
